    Fasule tė zeza (down home pinto beans)

    Ingredients:

    1 lb or 1.5 lb dried Pinto Beans
    1 Turkey Tail (I never use pork as a side meat)
    Cumin
    1 medium yellow onion
    1 large Jalapeno pepper
    Sea Salt or Kosher Salt

    Wash pinto beans in colander
    Pour pinto beans into large pan
    Add water (1 inch over beans)
    Bring water to a boil
    Boil for 3 minutes
    Turn heat off

    Let beans stand for 1 hour
    At the end of the hour drain beans and wash in colander
    Wash out pan and pour beans back into pan
    Water should be 1.5 inches over beans
    Bring beans to a boil

    Bring heat down to a simmer
    Slice yellow onion into thin slices and add to pot
    Add turkey tail to pot
    Add 1 teaspoon cumin to pot
    Slice Jalapeno pepper and add to pot

    You will now simmer beans from 2,3 or 4 hours - as many hours as you like
    Your main job is to keep water one inch above beans. When water level gets too low Boil water in another pan and add to beans. Continue this pattern until beans are to your liking.

    The last hour of cooking add sea salt to your taste

    Serve with buttermilk cornbread muffins or Italian garlic Parmesan bread.

    Pėrbėrėsit:

    1 ose 1.5 lb Fasule tė thata Pinto
    1 bisht gjeldeti (Unė nuk e pėrdor zakonisht mishin e derrit)
    1 luge qimnon (cumin)
    1 qepė tė mesme tė verdhė
    1 spec i madh jalapeno
    Kripė

    Lani fasulet nė kullorėse dhe hidhini nė nje tigan tė madh. Shtoni ujė (1 inē mbi fasule) dhe lerini te marrin vale e te ziejne per 3 min. Shuajeni zjarrin dhe lerin fasulet te qendrojne per nje ore. Pas nje ore, kullojeni ujin e fasuleve, shplani tiganin, hidhini fasulet perseri ne te duke i mbuluar me 1.5 inch uje mbi fasule dhe vendosini te ziejne.

    Kur fasulet te jene duke ziere ne zjarr te ngadalte, shtoni qepen e prere ne thella te holla,mishin e gjeldetit, nje luge cumin si dhe specat djegese (jalapeno) te prera holle.Pasi te kini shtuar gjithe perberesit lerini fasulet te ziejne per 3 - 4 ore (ose sipas pelqeses). Gjate zierjes nq se fasuleve u shteron uji, vazhdoni tu shtoni uje te vale here pas here.


    Gjate ores se fundit te zierjes mund t'u shtoni kripe sipas pelqeses. Zakonisht keto fasule mund te sherbehen me buke misri ose buke me kackavall dhe hudher.

    I'm going to take New Orleans Chef Emeril Lagasse's advice. He's always saying "Kick it up with garlic". Next time I prepare this meal I'm going to add 3 or 4 cloves of garlic and a bay leaf. I might even add a bell pepper.

    Good cooks or chefs are always experimenting with new ingredients. They're always on he hunt for something more.
